Oh So Yummy Crispy Tortilla Pizzas!

These were awesome! And the best thing is you can top them with just about anything. Here’s what I put on these:

Thinly Sliced Roma Tomatoes (roasted for a few minutes)Mini PepperoniGreen Bell Peppers (roasted for a few minutes)Onions (slightly browned)Mushrooms (tossed in with the brown onions for just a few minutes)Artichoke Hearts (chopped right out the jar)Chedder/Monterey Jack Cheese Blend

Sprinkle of Pizza Seasoning (I used Chef Paul Prudhomme)

Place the flour tortillas on a baking pan and top with a thin layer of olive oil and then sprinkle with a little cheese. Then I layered all the other ingredients, sprinkled pizza seasoning and topped with another very thin layer of cheese. Bake in a 375 degree oven until the cheese is melted and the tortillas are crispy.

I can’t wait to try these with some fresh veggies from our garden
