Okay, I have a confession. Pinterest is my new addiction! This is where I came across the most delicious Peanut Butter Cake Recipe. I found this recipe which had been pinned by a friend from The Girl Who Ate Everything. It was submitted by one of her readers, and since today is National Peanut Butter Day I thought I’d share it with you guys. I made this for a New Years Eve party and everyone loved it!!

Peanut Butter Sheet Cake

Mix in pan and bring to a boil:
1/4 cup creamy peanut butter
1 cup water
1/2 cup butter

Sift the following and add to the above mixture:
1 cup sugar
1 cup brown sugar
2 cups flour
1 tsp salt
1 tsp baking soda

Mix and add to the above mixture: (I let the above mixture cool before adding the following…didn’t want scrambled eggs)
2 eggs
1/2 cup buttermilk
1 tsp vanilla

Stir well and pour into greased or parchment lined cookie sheet pan (jellyroll pan). Bake for 15 minutes at 375 degrees.

Frosting
Mix in pan and bring to a boil:
3/4 cup butter
6 Tbsp buttermilk
1/2 cup peanut butter
Take off stove and add:
3 1/2 cups powdered sugar and 1 Tbsp vanilla. Pour over warm cake.

Remember those 6 FREE tubs of the new Philadelphia Indulgence that I received last week, well let me tell you it is absolutely delicious! I made  me the kiddos,  the above pictured snack.  And well… Philadelphia Indulgence with Nilla Wafers together are the perfect match I’m in love!

Last night was a “throw something together with what you’ve got” kind of night. Now, I knew putting broccoli on the menu was very mean risky. Risky as in we were having such a wonderful afternoon, and broccoli for supper can really ruin a person’s day. I mean REALLY ruin it. (well not my 5 year old’s because for some strange reason she loves broccoli…and a lot of other vegetables too…infact she not only likes to eat them, but she likes to draw them too…strange I know) I could just picture the whole thing in my mind. The protesting, “I’m NOT eating that.” or “That’s disgusting.” (that’s the 4 year olds favorite)  But nevertheless, I had some left over Velveeta cheese that I was determined to finish up, and ground beef in the freezer, so the logical addition to the menu was broccoli.

To my surprise the kids really didn’t protest all that much upon seeing their plates. A few faces were made, and that’s when I chimed in with “Try it! You’ll like it!”  (You know the song from Yo Gaba Gaba. It’s the kind of song that you will hear once, but will NEVER forget…I mean NEVER, no matter how hard you try…lol!)  So they tried it…And they LIKED IT!!! Whoo Hoo!! They cleaned their plates, and 2 of them even had 2nds!

Here’s what I did: I steamed some frozen broccoli while I browned a pound of ground beef. To the ground beef I added 8 oz of Velveeta cheese. Once the broccoli was finished steaming I mixed it with the ground beef and cheese. (Now on other occasions, I’ve taken this mixture and stuffed it into a pistolette bread, brush the bread with melted butter and bake…yummy!) But I didn’t have any bread on hand, so I went to the pantry and found a box Pasta Roni…Angel Hair Pasta and Herbs which I served on the side.  The best part was I didn’t even have to come up with some fabulous Disney Character or Super Hero name for it.

These were awesome! And the best thing is you can top them with just about anything. Here’s what I put on these:

Thinly Sliced Roma Tomatoes (roasted for a few minutes)
Mini Pepperoni
Green Bell Peppers (roasted for a few minutes)
Onions (slightly browned)
Mushrooms (tossed in with the brown onions for just a few minutes)
Artichoke Hearts (chopped right out the jar)
Chedder/Monterey Jack Cheese Blend
Sprinkle of Pizza Seasoning (I used Chef Paul Prudhomme)

Place the flour tortillas on a baking pan and top with a thin layer of olive oil and then sprinkle with a little cheese. Then I layered all the other ingredients, sprinkled pizza seasoning and topped with another very thin layer of cheese. Bake in a 375 degree oven until the cheese is melted and the tortillas are crispy.

I can’t wait to try these with some fresh veggies from our garden

I tried this new recipe out tonight…yes, for supper and it was delicious! You can get the entire recipe here. I’m all about improvising if I don’t have all the ingredients on hand, so I mixed up a batch of Bisquik Biscuits, and instead of heavy cream, I used the new Philadelphia Cooking Creme (Original).

Oh So Yummy!

My family has recently been blessed with a bread machine! I’ve wanted one for some time now and upon mentioning it to my sister-in-law, she gladly gave me the one her family no longer uses.

Well, we tried it out last night, with this oh so delicious cinnamon roll recipe that Money Saving Mom shared on her blog. Not only were they the best cinnamon rolls we have ever eaten, but it was so easy to make.

I’ll be sure to snap a picture next time before my family attacks the pan!

This is my family’s FAVORITE lasagne. You can find the recipe here. And believe it or not it is very inexpensive to make. This one cost me a little over $8.00. Here’s what I usually buy.

1 lb ground meat $1.98
1 cup chicken broth (cans of chicken stock are on sale this week at Walgreens for $.50)
26 – 28 oz of Pasta Sauce (I buy the Hunt’s Spaghetti Sauce in the can and can usually find it for around a $1.00)
8 oz cream cheese (I stock up when it goes on sale for less than a $1.00)
12 oz Shredded Mozzarella (I stock up when this goes on sale for around $1.50…can get it for cheap this week at Target)
No Boil Noodles (I buy the Luxury brand from Walmart for $1.72/box and can make 2 lasagnes and still have noodles left over)

Instead of the garlic, basil and oregano it calls for I season with Chef Paul Prudhomme’s Pizza/Pasta Magic Seasoning which includes all these and more.
